From the lower hills of the Wuyi Mountain range of Fujian Province in Eastern China this fantastic tea grows in soil which naturally gives the leaf a light tarry character. It is enhanced further by firing the tea over wood chippings. Contrary to most perceptions of Lapsang, it is the teas with the most subtle of smokey characters (like this one) that is most sought after. Works extremely well as an accompaniment to chocolate cake.
Brew with freshly drawn boiled water for 3-5 minutes. Experiment with it on its own or with any variation using milk, honey and/or lemon.
